Unicorns and glitter are taking over!

Who else is getting major nostalgic vibes? Unicorns and glitters are making their way back! I can remember being absolutely obsessed as a young 7 year old who refused to believe that unicorns were non-existent (or are they). From Starbucks to body scrub glitter this summer is looking fantastical.
Mermaid smoothies, unicorn noodles and of course the limited time Starbucks unicorn Frappuccino is definitely on my eat/drink list. These are not only trending super fast but also healthy for us? The unicorn noodles are actually colored with beet juice or purple cabbage so don’t be scared to try some. And if you don’t have a hipster café around the corner no worries these are easy to make! Here is a quick recipe from One Green Planet:

Ingredients include

  • Rice noodles or glass noodles, use whatever amount you want to make
  • Purple cabbage
  • Juice of lemon or lime !

    Then start with:

  • Start with a piece of purple cabbage. Add to a pot of water and cook for 5 minutes. The amount of cabbage you use for the water and the time you soak the noodles for will affect the vibrancy of the noodles.
  • Turn off heat and add the noodles. Let soak for 5-10 minutes, depending on how deep you want the color to be. Soak for 5 minutes for a pastel blue color. Remove noodles and place in a bowl.
  • Take a lime or lemon and squeeze some of the juice wherever you want it to be pink and watch the noodles change color in front of your own eyes.
